Specialty Coffee beans generally flourish in select altitudes and climates. They are grown by producers who know their land and are devoted to cultivating and perfecting the highest quality coffee beans, each variety having their own unique flavors. From start to finish, a standard of excellence is maintained throughout the processing.
Each year we visit various farms and companies that are in the three regions that our beans come from: Cerrado Minerio, Sul De Minas (both in the state of Minas Gerais), and Alto Mogiana (in the state of São Paulo).
We’ve had the privilege of becoming friends with some of the top farmers there and experiencing their gracious hospitality. It’s been quite an education learning about their region and the art and science of their own personal methods of producing award-winning coffees.
Every region produces coffee with its own distinct aromas and flavors. Each detail pertaining to the growth and processing of the beans affects the resulting flavor. For example, we learned that it makes a difference in the taste of the bean if the plant receives morning sun or afternoon sun. Also, specialty beans are free of defects and picked at the peak of ripeness.
